Prepare chickpeas

Lightly mash the drained and rinsed chickpeas with a fork in a bowl until mostly broken but still a bit chunky. This creates texture for the filling.

Cook vegetables

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sliced yellow onion and cook 2–3 minutes until translucent. Add sliced mushrooms and cook 3–4 minutes until they release liquid and begin to brown.

Add thinly sliced red and green bell peppers and minced garlic to the skillet. Sauté another 2–3 minutes until peppers soften but keep some bite.

Add the thinly sliced kale, salt, black pepper, and smoked paprika (if using). Cook 2–3 minutes, stirring, until kale wilts but remains bright green. If the pan becomes too dry, splash 1–2 tablespoons water to deglaze.

Stir the mashed chickpeas into the vegetable mixture and cook together 1–2 minutes to warm through and combine flavors. Taste and adjust seasoning with extra salt or pepper if desired. Remove from heat and set aside.

Avocado Spread

Scoop the avocado flesh into a small bowl. Add lime juice, 1/4 tsp salt, 1/4 tsp black pepper and 1 teaspoon water. Mash with a fork to a smooth-but-spreadable consistency. If needed, add up to 1 additional teaspoon water to reach desired texture. Set aside.

Veggie Garlic Aioli (Vegan)

In a small bowl, combine 1/2 cup vegan mayonnaise, 1 teaspoon minced garlic, 1 teaspoon lemon juice, 1 tablespoon chopped parsley, 1/4 tsp salt, 1/4 tsp black pepper and 1/4 tsp ground mustard (if using). Whisk until smooth and chill briefly while finishing the filling to let flavors meld.

Assembly & Serving

Warm tortillas: heat a dry skillet over medium and warm each tortilla 20–30 seconds per side until pliable, or wrap in foil and warm in a 300°F (150°C) oven for 5–8 minutes.

Lay a warm tortilla flat. Spread about 2 tablespoons of avocado spread down the center, then drizzle or spread 1 tablespoon of the veggie garlic aioli over the avocado (adjust to taste).

Spoon about 1/2 to 3/4 cup of the chickpea-kale vegetable mixture onto each tortilla. Add 1/4–1/2 cup cooked brown rice or quinoa if using the starch inside, and a handful (about 1/4 cup) of extra fresh greens for crunch.

Fold the sides of the tortilla in, then roll tightly from the bottom to enclose the filling. Repeat for remaining tortillas.

If you prefer a warm, crisp exterior, toast each wrapped tortilla seam-side down in a lightly oiled skillet over medium heat 1–2 minutes per side until golden.

Serve wraps whole or cut in half diagonally. If serving with roasted potato wedges, plate wedges on the side and offer extra aioli for dipping.
