Crunchy Battered French Toast
Prepare egg custard
In a wide shallow bowl or shallow dish combine eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, salt, and cornstarch. Whisk until fully combined and slightly frothy. The cornstarch helps the custard cling and create a slightly thicker coating.
Prepare dredge and panko
Place the all-purpose flour in a shallow plate. Spread the panko breadcrumbs on another plate or shallow dish. If you want extra crunch, pulse panko briefly in a food processor for 3–4 short pulses to slightly break large flakes (optional).
Soak and bread the bread
Working with one slice at a time, dip a bread slice into the custard, letting it soak for 10–15 seconds per side but not so long that it falls apart. Lift and let excess drip for 5 seconds. Dredge the custard-coated bread lightly in flour (this helps the panko adhere), shake off excess, then press both sides into the panko until well coated. Repeat with remaining slices.
Fry the coated bread
In a large nonstick or cast-iron skillet, heat vegetable oil over medium heat to about 325°F (medium–medium-low). Add unsalted butter to the pan and swirl until melted and foamy. Fry the panko-coated slices 2–3 at a time (do not overcrowd) for about 2–3 minutes per side, or until golden brown and crisp. Use tongs to flip carefully. Transfer cooked slices to a paper-towel-lined rack to drain and keep warm in a low oven (200°F / 95°C) while finishing the rest.
Bananas Foster Topping
Prepare bananas
Peel the bananas and slice them on the diagonal into 1/2-inch thick pieces. If you prefer halves lengthwise, cut each banana in half lengthwise then into 1/2-inch slices.
Make caramel base
In a large skillet over medium heat, melt the unsalted butter. Add the dark brown sugar and optional light brown sugar, stirring until the sugar dissolves and a glossy caramel forms, about 2–3 minutes. Stir in the heavy cream, lemon juice, and ground cinnamon, cooking 30–45 seconds until combined and slightly thickened.
Cook bananas and flame (optional)
Add the banana slices to the caramel and gently toss to coat. Cook for 60–90 seconds until bananas are warmed through but not mushy. Remove pan from heat. If using dark rum and you are comfortable flambéing: carefully add the rum to the pan (tilt pan slightly away from you) and ignite with a long lighter or match, allowing flames to burn off alcohol (about 5–10 seconds). Alternatively, do not light: add the rum or banana liqueur, return to medium-low heat and simmer 30 seconds to blend flavors. Be careful—the pan will be hot.
Finish sauce
If the sauce is too thin, return to low heat and simmer 30–60 seconds to reduce slightly. Taste and adjust: add a pinch of salt or extra lemon juice if needed. Remove from heat and keep warm.
Finishing & Assembly
Plate the French toast
Place 2 slices of the crunchy battered French toast per serving on warm plates (for 4 servings, use all 8 slices).
Top with Bananas Foster
Spoon the warm Bananas Foster and caramel sauce generously over the stacked French toast slices, dividing evenly.
Serve
Serve immediately while the toast is crisp and the bananas are warm. Recommend serving with extra caramel sauce on the side and coffee or a rich dark rum latte.
