Prepare the Meat
Cut the pork fatback and pork shoulder into small cubes. Make sure to keep the pieces uniform in size for even blending.
Blend Ingredients
In a large mixing bowl, combine the pork fatback, pork shoulder, spicy red pepper flakes, minced garlic, salt, and black pepper. Use a meat grinder or a food processor to blend the ingredients until you achieve a smooth paste.
Add Wine
Gradually mix in the white wine until the mixture is well incorporated and has a spreadable consistency.
Taste and Adjust
Taste the nduja and adjust the seasoning if necessary, adding more salt or spice as desired.
Store
Transfer the nduja into a clean, airtight container. Cover the surface with a thin layer of olive oil to help preserve it. Store in the refrigerator for up to a month.
