Cure the Tuna

In a bowl, mix the soy sauce, lemon juice, and chili oil. Place the albacore tuna fillet in the mixture, ensuring it’s fully submerged. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.

Cucumber Salad

Prepare the Cucumber Salad

Slice the cucumber thinly. In a separate bowl, mix the rice vinegar, sugar, and salt until dissolved. Add the cucumber slices and toss to coat. Let it marinate for about 10 minutes.

Nori Aioli

Make the Nori Aioli

In a bowl, combine the mayonnaise, minced garlic, and lemon zest. Tear the nori sheets into small pieces and mix them into the aioli until well combined.

Assembly

Assemble the Dish

Once the tuna is cured, slice it thinly. On a plate, arrange the cucumber salad, place the sliced tuna on top, and drizzle with nori aioli. Finish with a sprinkle of chili crunch for added flavor and texture.
