Make the Base
In a cocktail shaker, combine the vanilla vodka, Aperol, rhubarb syrup, and lemon juice. Fill the shaker with ice and shake vigorously for about 15 seconds.
Add Sparkle
Top the mixture with sparkling water and gently stir to combine.
Add Sorbet and Strawberries
Place a scoop of house-made strawberry sorbet on top and garnish with fresh strawberries.
