Beef Preparation

Cook the Beef

Season the NY Striploin Beef with salt and pepper. Heat a grill or skillet over medium-high heat, and sear the beef for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest before slicing thinly.

Make the Aioli

In a bowl, combine mayonnaise, horseradish, lemon juice, minced garlic, and salt. Mix well and refrigerate until ready to use.

Crispy Fried Onions

Prepare the Onions

Slice the onion into thin rings and soak them in buttermilk for at least 30 minutes. In a separate bowl, mix flour, cornstarch, salt, and pepper. Heat oil in a deep pan. Dredge the soaked onion rings in the flour mixture and fry until golden brown. Drain on paper towels.

Rosemary Beef Jus

Make the Jus

In a saucepan, melt butter over medium heat. Add beef broth, fresh rosemary, salt, and pepper. Simmer for about 10 minutes until slightly thickened. Strain before serving.

Assemble the Sandwich

Toast the Portuguese buns. Spread horseradish aioli on each side, layer with thinly sliced striploin beef, and top with crispy fried onions. Serve with rosemary beef jus for dipping.
