Prepare the Crème Brûlée
Infuse the Cream
In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat, add the Earl Grey tea bags, and let steep for about 15 minutes.
Mix the Egg Yolks
In a bowl, whisk together the egg yolks and granulated sugar until pale and creamy. Gradually whisk in the infused cream, making sure to remove the tea bags.
Cool the Custard
Remove the ramekins from the water and allow them to cool to room temperature. Refrigerate for at least 4 hours or overnight.
Caramelize and Serve
Caramelize the Sugar
Sprinkle a thin layer of granulated sugar on top of each chilled custard. Using a kitchen torch, caramelize the sugar until it forms a crispy shell. If you don’t have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to prevent burning.
Serve
Top each crème brûlée with a dollop of whipped cream, a drizzle of caramel sauce, and garnish with fresh gooseberries. Enjoy!
