Method
Preparing the Tofu
Drain and Press Tofu
Drain the tofu and wrap it in a clean kitchen towel. Press it under a heavy object for about 30 minutes to remove excess moisture.
Cube and Coat Tofu
Cut the pressed tofu into 1-inch cubes. Toss the cubes in cornstarch until evenly coated.
Fry Tofu
In a large skillet, heat vegetable oil over medium-high heat. Fry the tofu cubes until golden and crispy on all sides, about 10-15 minutes. Remove and drain on paper towels.
Season Tofu
In a bowl, mix soy sauce and sesame oil. Drizzle this mixture over the crispy tofu and toss to coat.
Preparing the Rice
Cook Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine with water in a rice cooker or pot and cook according to the manufacturer's instructions. Let it cool slightly.

Slice Vegetables
Thinly slice the cucumber, carrot, and radishes. Cut the avocado into cubes and chop green onions.

In a bowl, start with a base of sushi rice. Top with crispy tofu, sliced vegetables, and avocado. Garnish with nori sheets, sesame seeds, and pickled ginger.
