Prepare and Season the Chicken

Preheat the oven to 400°F (200°C). In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper. Rub the spice mixture all over the chicken breasts.

Cook the Chicken

Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken, skin side down, and sear for 5-7 minutes until the skin is crispy. Flip the chicken and transfer the skillet to the preheated oven. Roast for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).

Boil the Potatoes

While the chicken is roasting, peel and chop the russet potatoes into even chunks. Boil them in salted water until tender, about 15-20 minutes.

Whip the Potatoes

Drain the potatoes and return them to the pot. Add butter, minced garlic, and heavy cream. Whip until smooth and creamy. Season with salt and black pepper to taste.

Seasonal Vegetables

Roast the Vegetables

Toss the assorted seasonal vegetables with olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the oven alongside the chicken for the last 15-20 minutes of cooking, until tender.

In a mixing bowl, combine softened butter, chopped fresh herbs, and lemon juice. Mix until well combined. Set aside.
