Cook the Jasmine Rice

Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine 1 cup of jasmine rice with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for another 10 minutes, then fluff with a fork.

Prepare the Maple Ginger Soy Sauce

In a small bowl, whisk together the maple syrup, soy sauce, and grated fresh ginger. Set aside.

Prepare the Spicy Aioli

In another small bowl, mix the mayonnaise and sriracha together until well combined. Adjust the spiciness to taste by adding more sriracha if desired.

Prepare the Ingredients

Dice the avocado and cucumber into small pieces. Slice the green onions and set aside. If not already done, shell the edamame.

Assemble the Poke Bowl

In a serving bowl, start with a base of jasmine rice. Arrange the edamame, diced avocado, cucumber, pickled vegetables, and ahi tuna (cut into cubes) on top of the rice. Drizzle with the maple ginger soy sauce and add dollops of spicy aioli. Garnish with fresh cilantro and sliced green onions.
