Make the Chocolate Base

In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the mixture is hot but not boiling.

Add Cocoa and Chocolate

Whisk in the cocoa powder until fully dissolved, then add the bittersweet chocolate, stirring until melted and smooth.

Prepare Egg Mixture

In a separate bowl, whisk together the egg yolks and a pinch of salt until pale and slightly thickened.

Temper the Egg Yolks

Slowly pour the hot chocolate mixture into the egg yolks, whisking constantly to prevent curdling.

Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 5-7 minutes.
