Takeout Dinner Bowl
Prepare rice
Rinse 1 cup of rice under cold water until water runs clear. In a medium saucepan bring 2 cups chicken broth and a pinch of salt to a boil. Add rinsed rice, reduce heat to low, cover and simmer 15 minutes until liquid is absorbed. Remove from heat and let stand 5 minutes covered; fluff with a fork.
Prep and marinate chicken
While rice cooks, cut 1 lb chicken breast into thin bite-sized slices. In a bowl combine 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp brown sugar, 1 tsp grated ginger, 1 clove minced garlic, 1/2 tsp black pepper and 1 tsp sesame oil. Add chicken, toss to coat and let sit 10 minutes.
Cook vegetables
Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add 2 cups broccoli florets and 1 thinly sliced carrot. Stir-fry 3–4 minutes until bright and starting to become tender but still crisp. Remove vegetables to a bowl and set aside.
Cook chicken
Add remaining 1 tbsp vegetable oil to the hot skillet. Add the marinated chicken in a single layer and let sear 2 minutes without moving to get color, then stir-fry 2–3 more minutes until cooked through and no longer pink (internal temperature 165°F / 74°C). Add remaining 2 cloves minced garlic and cook 30 seconds until fragrant.
Make sauce and finish
Into the pan with chicken add 3 tbsp soy sauce, 1 tbsp oyster sauce and the cooked vegetables. Mix 1 tsp cornstarch with 2 tbsp water to make a slurry and add to the pan. Stir and cook 1–2 minutes until sauce thickens and coats chicken and vegetables. Taste and add up to 1 tsp salt if needed. Turn off heat and stir in sliced green onions and 1 tsp sesame oil.
Assemble bowl
Divide the cooked rice into serving bowls. Top rice with the chicken and vegetable mixture. Sprinkle 1 tsp sesame seeds if using and serve immediately with 2 tbsp chili or sweet & sour sauce on the side. Pack the 16 oz soda chilled alongside.
Appetizer (Egg Rolls)
Heat 1 cup vegetable oil in a deep skillet or saucepan to 350°F (175°C). Carefully slide frozen egg rolls into hot oil (do not overcrowd) and fry 3–5 minutes, turning occasionally, until golden brown and crisp. Remove to a paper towel–lined plate to drain. Alternatively bake according to package instructions for 18–22 minutes at 400°F, turning halfway. Serve with 2 tbsp sauce.
Beverage
Chill the 16 oz soda and serve cold with the takeout bowl and appetizer.
