Method
Classic Lemon-Lime Soda
Mix and Chill
In a large pitcher, combine the fresh lemon juice, fresh lime juice, and simple syrup. Stir until blended.
Add chilled club soda to the pitcher and gently stir once or twice to combine without flattening the carbonation.
Ginger Ale-Style Soda
If making ginger syrup
Make the quick ginger syrup (see recipe section) or use store-bought. Allow syrup to cool completely before using.
In a pitcher, combine ginger syrup and fresh lime juice. Stir to mix.
Slowly add chilled club soda to the ginger mixture and stir gently to combine. Taste and adjust ginger syrup quantity if you prefer a stronger or milder ginger flavor.
Serve over ice and garnish with lime wedges.
Fruit Sparkler (Berry)
Prepare the berry purée by placing mixed berries in a blender and processing until smooth. Optionally, strain through a fine mesh sieve to remove seeds for a smoother drink.
If desired, sweeten the purée with simple syrup to taste (start with 1–2 tablespoons). Stir in the lemon juice to brighten the flavor.
Add chilled club soda to the purée and stir gently to incorporate. Pour over ice and top with fresh berries as garnish.
Grapefruit Tonic
In a pitcher, combine fresh pink grapefruit juice and agave or simple syrup. Stir to dissolve the sweetener.
Add chilled tonic water, gently stir once, and taste. Adjust sweetness if needed.
Serve over ice and garnish with grapefruit slices.
Quick Ginger Syrup (for Ginger Ale-Style Soda)
Combine sliced fresh ginger and water in a small saucepan. Bring to a gentle simmer over medium heat, then reduce heat and simmer for 10–15 minutes to extract ginger flavor.
Add granulated sugar to the ginger-infused water and stir until the sugar dissolves completely. Simmer for another 2–3 minutes to thicken slightly.
Remove from heat, stir in lemon juice, and let the syrup cool to room temperature. Strain out the ginger slices and store the syrup in a sealed container in the refrigerator for up to 2 weeks.
