Prepare ingredients

Rinse the rice in a fine mesh strainer under cold water until the water runs almost clear. Peel and finely dice the carrot into small cubes (kid-friendly size). Cut the chicken breast into 1/2-inch cubes. Measure out the peas and cheese.

Brown the chicken

Heat 1 tablespoon olive oil in a medium nonstick skillet over medium heat. Add the chicken cubes in a single layer, season with 1/2 teaspoon of the salt and the black pepper. Cook, stirring occasionally, until golden on the outside and no longer pink inside, about 6–8 minutes depending on size. Remove chicken to a plate and set aside.

Cook rice with veg

Add butter to the same skillet (reduce heat if it’s smoking). Add the diced carrot and sauté 2–3 minutes until slightly softened. Add the rinsed rice and stir for 1 minute to coat the grains with butter. Pour in 2 cups low-sodium chicken stock (or water) and stir in the remaining 1/2 teaspoon salt and the oregano if using. Bring to a gentle simmer, then reduce heat to low, cover, and cook 12–14 minutes until rice is tender and liquid is absorbed.

Finish with peas, chicken & cheese

Once the rice is cooked, remove the skillet from heat and gently fold in the frozen peas (no need to thaw) and the cooked chicken. Cover again and let sit 3–4 minutes — the residual heat will warm the peas and chicken. Stir in 3 tablespoons shredded cheddar until melted and evenly distributed. Taste and adjust seasoning if needed.

Serve

Fluff the rice gently with a fork. Spoon into shallow bowls suitable for kids. Sprinkle optional chopped parsley or extra cheddar on top for serving.

Prepare the produce: thinly slice the cucumber (or cut into half-moons if preferred) and core then dice the apple into small bite-sized pieces. If worried about browning, toss the apple pieces immediately with the lemon juice.

Make the dressing: in a small bowl combine 3 tablespoons plain yogurt, 1 teaspoon honey, and a small pinch (about 1/8 tsp) of salt. Stir until smooth.

Combine: toss the cucumber and apple with the yogurt dressing until evenly coated. Taste and add the remaining 1/8 teaspoon salt if desired. Chill briefly if time allows or serve immediately alongside the warm rice dish.

Optional Garnish / Serving Notes

For picky eaters, serve components separately: chicken and rice on one side of the plate and the salad on the other. Keep extra cheese available for sprinkling. Leftovers keep well refrigerated in an airtight container for up to 2 days.
