Simple Syrup (Soda Base)
Make simple syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar fully dissolves. Do not boil vigorously. Once clear, remove from heat.
If using lemon for brightness, stir in 1 tablespoon fresh lemon juice and 1 teaspoon lemon zest while the syrup is warm. Let cool to room temperature.
Flavor Concentrate
Prepare flavoring
Choose your flavor path: citrus, berry, ginger, vanilla, or herbal. For citrus, strain 1/2 cup fresh juice and discard seeds. For berries, mash 1/2 cup berries and lightly simmer with 1/4 cup of the prepared simple syrup for 3–5 minutes, then strain to remove seeds. For ginger, simmer sliced ginger in 1/2 cup of simple syrup for 8–10 minutes to extract flavor, then strain. For vanilla, stir 1/2 tsp vanilla into the cooled syrup. For herbs or spices, bruise 6 leaves or add 1 whole spice to the warm syrup and steep 10–15 minutes with the pan covered.
Taste the concentrate and adjust: add more simmer time for stronger extraction, or dilute with a little water if too intense. Allow concentrate to cool completely.

Adjust acidity and seasoning
Stir 1/2 teaspoon citric acid into the cooled flavor concentrate for shelf stability and soda brightness. If you prefer fresh acid, substitute with 1–2 tablespoons fresh lime juice (add only after cooling). Add a pinch (1/8 tsp) of salt to round the flavors. Taste and adjust: more citric acid or lime juice for tarter soda, more syrup for sweeter soda.

Mix and carbonate
For a lightly sweet bottled soda, combine 1/2 cup flavor concentrate (syrup + flavor) with 1 cup chilled carbonated water per bottle (adjust sweetness to taste). Gently stir to incorporate—do not shake vigorously to avoid foaming. If making multiple bottles, scale proportionally: use roughly 1 part concentrate to 8 parts carbonated water as a starting ratio (adjust to taste).
Chill bottles thoroughly before serving. Serve over ice if desired.
