Method
Pasta
Boil pasta
Bring a large pot of water to a rolling boil (about 4–6 quarts for 12 oz pasta). Add 1 tablespoon kosher salt and 1 teaspoon olive oil. Add pasta and cook uncovered, stirring occasionally, until al dente according to package directions (usually 8–12 minutes). Reserve 1 cup of pasta cooking water, then drain pasta and set aside.
Protein
Prepare protein
While pasta water heats, pat the chosen protein dry and season lightly with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
For shrimp: Add 1 tablespoon butter to the skillet and cook shrimp 1–2 minutes per side until pink and opaque. Remove and set aside.
For meatballs: If pre-cooked, warm them in the skillet with a splash of sauce for 4–5 minutes. If raw, brown fully then simmer in sauce until cooked through.
For vegetarian mushrooms: Add 1 tablespoon olive oil and 1 tablespoon butter to the skillet, sauté mushrooms with a pinch of salt over medium-high heat until deeply browned, about 6–8 minutes. Remove and set aside.
Sauce
Develop sauce base
In the same skillet, lower heat to medium and add 1 tablespoon olive oil and 1 tablespoon butter. Add minced garlic and chopped shallot or onion and sauté until translucent and fragrant, about 1–2 minutes. Add red pepper flakes and dried oregano and cook 30 seconds.
Marinara option: Pour in 2 cups marinara, stir and simmer 4–6 minutes to warm and slightly reduce. Return cooked protein to skillet and heat through 2–3 minutes.
Alfredo option: Add 2 cups Alfredo sauce to the skillet and heat gently. If sauce is very thick, add 1/4–1/2 cup reserved pasta water to loosen. Fold in cooked protein and simmer 1–2 minutes. Adjust seasoning.
Aglio e Olio option: Increase garlic to 4 cloves if desired, keep skillet at medium-low. Add 3 tablespoons extra-virgin olive oil, cook garlic until pale golden but not burnt. Toss in cooked pasta, add 1/4 cup reserved pasta water and finish with 1 tablespoon butter, red pepper flakes, parsley or basil, and protein.
Combine & Finish
Toss pasta with sauce
Add drained pasta to the skillet with the sauce and protein. Toss vigorously for 1–2 minutes so sauce coats pasta; add reserved pasta water 1–2 tablespoons at a time as needed to reach desired consistency (use up to 1/2 cup).
Finish: Stir in 2 tablespoons butter (optional) for gloss, then add 1/2 cup grated Parmesan, torn basil, remaining 1/4 teaspoon black pepper, and 1/4 teaspoon salt or to taste. Toss to combine.
Serve immediately: Plate portions, sprinkle additional Parmesan and basil, and offer red pepper flakes at the table.
