For the Tiramisu

Method

Prepare the Espresso

Brew the Espresso

Brew 300 ml of espresso coffee and let it cool to room temperature.

Make the Cream Mixture

Whisk Egg Yolks and Sugar

In a mixing bowl, whisk together 4 egg yolks and 100 g of sugar until the mixture is pale and creamy.

Add Mascarpone

Gently fold in 500 g of mascarpone cheese into the egg yolk mixture until smooth.

Whip the Cream

In another bowl, whip 250 ml of heavy cream until soft peaks form.

Combine Mixtures

Carefully fold the whipped cream into the mascarpone mixture until fully combined. Add 1 tsp of vanilla extract and mix gently.

Assemble the Tiramisu

Dip Ladyfingers

Quickly dip each ladyfinger biscuit (24 pieces) into the cooled espresso, ensuring they are soaked but not soggy.

Layer Ingredients

In a rectangular dish, layer half of the dipped ladyfingers on the bottom.

Add Cream Mixture

Spread half of the mascarpone cream mixture over the ladyfingers.

Repeat Layers

Repeat with another layer of dipped ladyfingers and top with the remaining mascarpone cream.

Chill the Tiramisu

Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Serve the Tiramisu

Dust with Cocoa

Before serving, dust the top of the tiramisu with 2 tablespoons of cocoa powder and sprinkle dark chocolate shavings (50 g) on top.

Cut into squares and serve chilled.
