Prepare the Onions

Slice the onions and sauté them in butter over medium heat until they are caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

Make the Onion Purée

Once the onions are caramelized, add the heavy cream and blend until smooth. Season with salt and set aside.

Prepare the Leeks

Trim and slice the leeks. Heat olive oil in a pan and sauté the leeks until soft, about 5-7 minutes. Season with salt and pepper.

Cook the Picanha

Season the Picanha with salt and black pepper. Heat a grill or skillet over medium-high heat and sear the Picanha for about 4-5 minutes on each side for medium-rare. Adjust cooking time based on desired doneness.

Serve

Slice the Picanha and serve it on a plate with a generous dollop of the caramelized onion purée and sautéed leeks on the side. Drizzle with soy sauce for added flavor.
