Salad Preparation

Prepare the Croutons

Preheat the oven to 375°F (190°C). Cut the sourdough bread into cubes and toss them with 2 tablespoons of olive oil, minced garlic, salt, and pepper. Spread them on a baking sheet and bake for about 15 minutes, or until golden and crispy.

Make the Dressing

In a bowl, whisk together the remaining olive oil, lemon juice, Worcestershire sauce, and Pecorino Romano cheese. Season with salt and black pepper to taste.

Assemble the Salad

In a large mixing bowl, combine the chopped Romaine lettuce with the dressing. Toss well to coat the leaves evenly.

Serve

Plate the dressed Romaine lettuce and top with the baked sourdough croutons. If desired, finish with extra Pecorino Romano cheese on top.
