Marinate the Chicken
In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger. Add the chicken tenders to the marinade, cover, and refrigerate for at least 30 minutes.
Prepare the Sauce
In a separate bowl, mix cornstarch with a tablespoon of water to create a slurry. Add the slurry to the remaining marinade in a saucepan over medium heat. Stir continuously until the sauce thickens, about 5 minutes. Remove from heat.
Fry the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, shaking off excess. Fry the tenders in batches until golden brown and cooked through, about 4-5 minutes per side.
Serve
Once cooked, transfer the chicken tenders to a serving platter. Drizzle with the sweet Asian sauce, and garnish with chopped green onions and toasted sesame seeds. Serve immediately.
