Prepare the Potatoes

Peel and cut the Yukon gold potatoes into quarters. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and mash with a little olive oil, salt, and pepper.

Cook the Steak

Season the prime sirloin steaks with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Cook the steaks for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove and let rest.

Prepare the Red Wine Onions

Slice the red onion and sauté in the skillet until softened. Add red wine and simmer until reduced by half, about 5-7 minutes. Season with salt and pepper.

Make the Blue Cheese Fondue

In a saucepan over medium heat, combine heavy cream and blue cheese. Stir until smooth and creamy. Remove from heat.

Sauté the Spinach

In a separate pan, sauté fresh spinach in a little olive oil until wilted. Season with salt and pepper.

Plate the Dish

On each plate, place a scoop of mashed Yukon potatoes, top with sautéed spinach, place the sliced steak on top, drizzle with red wine onions, and finish with blue cheese fondue.
