Preheat Oven

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients

In a large mixing bowl, combine almond flour, coconut sugar, baking powder, and salt. Mix well.

Combine Wet Ingredients

In a separate bowl, whisk together melted coconut oil, maple syrup, and vanilla extract until fully combined.

Form the Dough

Add the wet ingredients to the dry ingredients and mix until a dough forms. It should be slightly sticky but manageable.

Shape Cookies

Using a tablespoon, scoop out the dough and form small balls, placing them on the prepared baking sheet. Flatten each ball slightly.

Bake

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

Cool Cookies

Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Melt Chocolate

While the cookies are cooling, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.

Dip Cookies

Once the cookies have cooled, dip the bottom half of each cookie into the melted dark chocolate and place them back on the wire rack to set.
