Sauce preparation
Warm sauces
Warm the hot fudge and caramel briefly so they pour. Place each sauce in its own microwave-safe small bowl. Microwave on medium (50% power) for 10–15 seconds, stir and repeat in 5–10 second bursts until pourable but not hot (total 20–30 seconds depending on microwave). Alternatively, warm over low heat in a small saucepan, stirring, until just pourable (about 30–60 seconds).
If using store-bought fudge that is very thick, thin it with 1 tsp warm milk or cream per 3 tbs sauce and stir until smooth. For a subtle flavor contrast, stir 1/8 tsp salt into the caramel (optional).
Pecan preparation
Assembling the sundae
Scoop three scoops of vanilla ice cream into a chilled sundae dish or bowl, arranging them so they are slightly separated but touching.
Drizzle the warmed hot fudge over the ice cream, using approximately 3 tbs total and ensuring an even coating across scoops.
Drizzle the warmed caramel over the ice cream and fudge, using approximately 2 tbs and letting some caramel run down the sides for visual appeal.
Add 2 tbs whipped cream in one or two dollops on top of the sundae.
Place the maraschino cherry on top of the whipped cream.
If desired, finish with the optional 1 tsp extra chopped pecans for crunch and a light sprinkle of the optional 1/8 tsp salt over the top to enhance flavor.
Serving
Serve immediately with a long-handled spoon so the hot fudge and caramel contrast with the cold ice cream. Leftover sauces can be reheated briefly before next use.
