Swirl Base (Creamy Yogurt Filling)
Soften and combine
In a medium bowl, beat the softened cream cheese with a whisk or electric mixer until smooth and free of lumps (about 1–2 minutes).
Whisk yogurt and cream
Add the Greek yogurt, heavy cream, granulated sugar, vanilla extract, and lemon zest to the bowl. Whisk until fully combined and slightly thickened, about 1 minute. Taste and adjust sugar or lemon zest as desired.
Chill briefly
Cover and refrigerate the swirl base while you prepare the fruit swirl and crunchy layer, at least 15 minutes to allow flavors to meld and texture to firm slightly.
Fruit Swirl
Cook fruit
Place the frozen mixed berries, water, and granulated sugar in a small saucepan over medium heat. Stir occasionally and bring to a gentle simmer. Cook until fruit has softened and released juices, about 6–8 minutes.
Mash and reduce
Use a fork or potato masher to gently mash the berries to your desired chunkiness. Continue to simmer until the mixture thickens slightly, about 3–5 more minutes. Stir in the lemon juice.
Cool and optionally strain
Remove from heat and let cool 10 minutes. For a smooth swirl, press the mixture through a fine-mesh sieve into a bowl, discarding seeds and solids; for a rustic swirl, skip straining. Cool completely before using (about 20–30 minutes in the fridge).
Crunchy Layer (Optional)
Make crumb base
In a small bowl, combine the graham cracker crumbs (or granola), melted butter, and brown sugar. Stir until evenly moistened. If using as a base, press half into the bottom of an 8x8-inch dish or into serving glasses; if using as a topping, keep loose.
Toast (optional)
For extra flavor, spread crumbs on a baking sheet and bake at 350°F (175°C) for 6–8 minutes until lightly toasted. Cool before adding to servings.
Assembly and Serve
Layer and swirl
Spoon half of the chilled yogurt base into your serving dish(es) or an 8x8-inch pan. Dollop 3–4 tablespoons of the cooled fruit mixture over the yogurt base in several spots. Add the remaining yogurt base, then add additional dollops of fruit on top. Using a butter knife or skewer, gently swirl the fruit into the yogurt with figure-eight or circular motions - avoid overmixing to keep distinct ribbons of fruit.
Add crunchy layer and chill
If using a crumb base, you should have already pressed it in. Sprinkle any remaining crumbs or granola on top. Refrigerate assembled swirl for at least 1 hour to set and let flavors marry (2 hours for firmer texture).
Garnish and serve
Just before serving, top with extra whole berries and mint leaves. Serve chilled. Keeps covered in the refrigerator for up to 3 days; stir gently before serving if separation occurs.
