Prepare aromatics

Peel and finely mince the garlic. Peel and grate or mince the ginger so you have roughly 1 tablespoon total. Measure and set aside the pineapple chunks if using.

Bloom aromatics

Heat a small saucepan over medium heat and add 1 teaspoon vegetable oil. When warm, add the minced garlic and grated ginger and sauté for 20–30 seconds until fragrant but not browned. This step mellows raw bite and releases aroma into the oil.

Combine liquids and seasonings

To the saucepan add 3 cups pineapple juice, 1 cup rice vinegar, 1 cup granulated sugar, 1/2 cup ketchup, 2 tablespoons soy sauce, and 1 tablespoon tomato paste. Stir until the sugar and tomato paste are mostly dissolved. Add 1/4 teaspoon salt, 1/8 teaspoon ground white (or black) pepper, and 1/4 teaspoon red pepper flakes if using. Bring mixture to a gentle simmer over medium heat, stirring occasionally.

Simmer & reduce

Once simmering, reduce heat to medium-low and let the sauce simmer, uncovered, for 8–10 minutes so it concentrates slightly and the flavors meld. Taste and adjust balance: add a little more sugar for sweetness, vinegar for tang, or soy sauce for depth if desired.

Thicken with cornstarch slurry

In a small bowl whisk together 3 teaspoons cornstarch and 3 tablespoons cold water until fully smooth (no lumps). Increase heat under the saucepan to medium so the sauce is gently bubbling, then slowly whisk in the cornstarch slurry. Continue to cook, stirring constantly, until the sauce thickens and becomes glossy, about 1–2 minutes. If sauce becomes too thick, stir in 1–2 tablespoons water to reach desired consistency.

Finish with pineapple (optional)

If using pineapple chunks, stir in 1/2 cup drained pineapple pieces and warm through for 1 minute. Remove the saucepan from heat.

Cool and store

Let the sauce cool to room temperature, then transfer to a clean jar. The sauce will thicken a bit more as it cools. Store in the refrigerator for up to 7–10 days. Reheat gently before using.

Usage notes: Use this sweet & sour sauce as a dipping sauce for egg rolls, dumplings, or as a glaze for stir-fries, chicken, pork or tofu. For a smoother texture, strain the sauce through a fine mesh sieve before cooling to remove ginger/garlic fibers and any pulp.
