Prepare peanuts
If your peanuts are not already dry roasted, spread 2 cups of raw peanuts on a baking sheet and roast at 350°F (175°C) for 8–10 minutes, stirring once, until fragrant and lightly golden. Let cool 10 minutes. If using pre-roasted peanuts, skip roasting and measure 2 cups.
Initial grind
Place the cooled roasted peanuts in the bowl of a food processor fitted with an S-blade. Pulse 10–12 times to break the nuts down into coarse crumbs. Scrape down the sides with a spatula so the mixture is even.
Develop the paste
Run the processor continuously for 1–2 minutes. The peanuts will go from crumbs to a dry ball, then begin to smear into a thick paste. Scrape the sides and bottom every 30–45 seconds to keep the blades moving freely.
Smooth and finish
With the processor running, drizzle 1 tablespoon of neutral oil through the feed tube, then add 1 teaspoon salt. Continue processing another 1–2 minutes until the butter reaches your desired consistency (roughly 2–4 minutes more total, depending on how smooth you want it). For extra-creamy texture, add the optional 1 teaspoon melted butter or additional oil and process 20–30 seconds more.
Sweeten (optional)
If you want sweetened peanut butter, add 1 teaspoon honey or granulated sugar and pulse 5–10 seconds to incorporate. Taste and adjust salt or sweetener to preference.
Adjust texture
If the peanut butter seems too thick, add additional oil 1/4 teaspoon at a time, pulsing between additions, until you reach the desired spreadability.
Store
Transfer peanut butter to a clean jar or airtight container. Smooth the top, press a piece of plastic wrap directly onto the surface to minimize air, then seal the lid. Room temperature storage: up to 2 weeks. Refrigerated: up to 2 months. Stir before use if oil separates (natural peanut butter may separate).
Notes on equipment and safety
Use a high-powered food processor for best results—a blender can work but may require stopping to scrape frequently. Do not overfill the processor; work in batches if making more than recipe amount. Taste and adjust seasoning and sweetness at the end.
