Base Iced Coffee

Brew and cool

Brew 4 cups of very strong coffee (use about double the normal grounds). Let it cool to room temperature, then chill in the refrigerator until cold (at least 30 minutes).

Assemble drink

Fill a large 32–40 oz serving cup with 3 cups of ice. Pour the chilled strong coffee over the ice, then add 1 cup whole milk and 3 tablespoons simple syrup (adjust to taste). Stir thoroughly to combine. Taste and add more simple syrup if desired.

Top with whipped cream (optional) and a dusting of cocoa powder or cinnamon. Serve with a straw.

Iced Tea (Large)

Bring 4 cups of water to a near boil and pour over 4 black tea bags in a heatproof container. Steep 4–6 minutes for a bold brew, then remove the tea bags, pressing gently to extract flavor.

Add 4 cups cold water to the brewed tea to cool and stretch it (this yields a large pitcher). Stir in 2 tablespoons lemon juice and 2 tablespoons simple syrup, adjusting sweetness and acidity to taste. Refrigerate until cold (at least 20–30 minutes) or add ice immediately if serving right away.

Sift 2 teaspoons matcha powder into a small bowl to remove clumps. Add 1 tablespoon hot (about 175°F / 80°C) water and whisk briskly in a zig-zag motion until a smooth, slightly frothy paste forms.
