Method
Base Iced Coffee
Brew and cool
Brew 4 cups of very strong coffee (use about double the normal grounds). Let it cool to room temperature, then chill in the refrigerator until cold (at least 30 minutes).
Assemble drink
Fill a large 32–40 oz serving cup with 3 cups of ice. Pour the chilled strong coffee over the ice, then add 1 cup whole milk and 3 tablespoons simple syrup (adjust to taste). Stir thoroughly to combine. Taste and add more simple syrup if desired.
Iced Tea (Large)
Steep tea
Bring 4 cups of water to a near boil and pour over 4 black tea bags in a heatproof container. Steep 4–6 minutes for a bold brew, then remove the tea bags, pressing gently to extract flavor.
Cool and dilute
Add 4 cups cold water to the brewed tea to cool and stretch it (this yields a large pitcher). Stir in 2 tablespoons lemon juice and 2 tablespoons simple syrup, adjusting sweetness and acidity to taste. Refrigerate until cold (at least 20–30 minutes) or add ice immediately if serving right away.
Serve
Fill a large cup with 3 cups ice. Pour the chilled tea over the ice, garnish with lemon slices or mint if desired, and serve.
Iced Matcha Latte (Large)
Whisk matcha
Sift 2 teaspoons matcha powder into a small bowl to remove clumps. Add 1 tablespoon hot (about 175°F / 80°C) water and whisk briskly in a zig-zag motion until a smooth, slightly frothy paste forms.
Combine and chill
Fill a large cup with 2 cups ice. Pour 2 cups cold milk over the ice. Stir in 1 tablespoon vanilla syrup. Add the prepared matcha paste and stir vigorously until fully incorporated and evenly green. Taste and adjust sweetness with extra syrup if desired.
Garnish
Top with a small dollop of whipped cream if desired and sprinkle a pinch of matcha or cinnamon. Serve immediately.
Iced Fruit Soda (Large)
Prepare fruit syrup
If using fruit puree, mix 4 tablespoons puree or syrup with 1 tablespoon lemon or lime juice and 2 tablespoons water to loosen. For thicker puree, strain if you want a smoother soda.
Assemble soda
Fill a large cup with 2 cups ice. Pour the fruit syrup mixture over the ice, then slowly top with 3 cups chilled club soda. Stir gently once to combine, so you keep carbonation.
Finish
Garnish with fresh fruit slices and a mint sprig. Serve with a wide straw or spoon for any fruit bits.
Optional Garnishes & Add-ins
Use whipped cream, additional simple syrup, spices, or mint to finish any of the drinks. Add whipped cream to coffees or matcha; sprinkle cocoa or cinnamon over cream. Serve additional syrup on the side for guests who want sweeter drinks.
