Prepare ingredients
Measure and have ready Dijon mustard, yellow mustard, honey, mayonnaise, apple cider vinegar, olive oil, lemon juice, minced garlic, salt, and black pepper. If using fresh garlic, mince finely. Warm water should be at room temperature or slightly warm (not hot).
Combine base ingredients
In a medium mixing bowl, add 1/2 cup Dijon mustard, 1/4 cup yellow mustard, 1/2 cup honey, and 1/4 cup mayonnaise. Whisk vigorously until the mixture is smooth and uniform in color and consistency (about 30–45 seconds).
Emulsify and balance acidity
Add 2 tablespoons apple cider vinegar, 1 tablespoon olive oil, and 1 teaspoon fresh lemon juice to the bowl. Whisk thoroughly to incorporate. The oil helps slightly mellow the bite and create a silkier texture.
Season
Stir in 1/2 teaspoon minced garlic, 1 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Taste and adjust: if it tastes too sharp, add an extra 1–2 teaspoons honey; if too sweet, add 1/2 teaspoon more apple cider vinegar or 1/4 teaspoon Dijon mustard.
Adjust consistency
If the sauce is too thick for your intended use (dipping vs. drizzling), whisk in warm water 1 tablespoon at a time (up to 2 tablespoons) until you reach the desired consistency. For a pourable dressing aim for slightly thinner than a ketchup consistency; for a dip keep it thicker.
Chill and meld flavors
Transfer the honey mustard to an airtight container or small jar. Refrigerate for at least 30 minutes to let flavors meld. Sauce will thicken slightly when chilled; stir before serving. Keeps well refrigerated for up to 2 weeks.
