Method
Prepare Meat Blend
Measure and combine
Weigh out 0.8 lb ground beef and 0.2 lb ground pork (total 1 lb). Place both meats in a large chilled mixing bowl. Keep ingredients cold to preserve texture and minimize smear.
Add seasonings
Sprinkle 1 tsp kosher salt, 1 tsp freshly ground black pepper, 1/2 tablespoon Worcestershire sauce, 1/2 tsp garlic powder, 1/2 tsp onion powder, and 1/4 tsp smoked paprika (if using) evenly over the meat.
Fold gently
Using clean hands or a spatula, fold the seasonings into the meat with 8–10 gentle strokes. Do not overwork; mix until combined and seasonings are distributed but the meat still feels slightly loose. If mixture feels dry, add 1 tablespoon cold water and fold once or twice to incorporate.
Forming and Portioning
Portion
This recipe yields about 1 pound of seasoned Gillieburger meat intended to make 5 patties per pound. Divide the meat into 5 equal portions (about 3.2 oz / 90 g each). Use a scale for accuracy.
Shape patties
Gently form each portion into a loose ball, then press into patties about 3/4 inch thick and 3.5–4 inches in diameter. Make a shallow dimple in the center of each patty with your thumb to reduce doming during cooking.
Cook
Sear and finish
Place patties onto the hot surface without crowding. Cook for 3–4 minutes on the first side, until a deep brown crust forms. Flip and cook for an additional 2–4 minutes, depending on desired doneness (3 minutes second side for medium-rare to medium, longer for medium-well). If adding cheese, place slices on patties in the last minute of cooking and cover briefly to melt.
Rest
Transfer cooked patties to a plate and let rest 3–5 minutes to allow juices to redistribute before assembling into burgers.
