Blueberry Frosting
Assembly / Cake or Cupcakes (for serving)
Method
Blueberry Frosting
Make blueberry puree
Place 1 cup fresh blueberries in a small saucepan with 1 tablespoon water and 1 teaspoon lemon juice. Cook over medium-low heat, stirring occasionally, until berries break down and liquid reduces, about 6–8 minutes. Use a fork or potato masher to smash any large pieces. Remove from heat and let cool 10 minutes, then push the mixture through a fine mesh sieve into a small bowl, pressing to extract as much puree as possible. Discard solids. You should have about 1/3 to 1/2 cup puree. Chill briefly if still warm.
Prepare base
In a large mixing bowl, beat 1/2 cup softened unsalted butter and 1/4 cup softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 1–2 minutes. Scrape down the bowl.
Add sugar and flavor
With the mixer on low, gradually add 2 cups confectioners' sugar, about 1/2 cup at a time, to prevent a sugar cloud. After the sugar is incorporated, add 1 teaspoon vanilla extract, a pinch of salt, and the strained cooled blueberry puree. Increase mixer speed to medium and beat until smooth and fully combined, 1–2 minutes. If the frosting is too thin, add up to 1/4 cup more powdered sugar; if too thick, add 1–2 teaspoons milk or cream to reach spreadable consistency.
Adjust color (optional)
If you want a more vivid purple-blue color, add small drops of gel food coloring and mix until evenly distributed. Taste and, if needed, adjust brightness with an extra 1/2 teaspoon lemon juice (adds brightness) or a pinch more salt to balance sweetness.
Chill to set
For firmer piping consistency, cover the bowl and chill the frosting in the refrigerator for 20–30 minutes. Stir briefly before using. If it becomes too firm, let it sit at room temperature 5–10 minutes and re-whip briefly.
Assembly / Serve
If using cupcakes: Once cupcakes are completely cooled, transfer frosting to a piping bag fitted with your preferred tip (or use an offset spatula). Pipe or spread frosting onto each cupcake. Garnish each cupcake with 3–5 fresh blueberries and, if desired, a tiny dusting of powdered sugar.
If using a full cake: Place cooled cake on a turntable or serving plate. Apply a thin crumb coat of frosting to trap crumbs and refrigerate 15 minutes. Apply a final thicker coat of frosting using an offset spatula or pipe decoration as desired. Garnish the top and/or sides with fresh blueberries and additional blueberry puree drizzle if desired.
Storage: Store frosted cupcakes or cake covered in the refrigerator for up to 3–4 days (frosting contains fresh fruit and cream cheese). Bring to room temperature 20–30 minutes before serving for best texture and flavor.
