Make simple cola syrup base

Combine granulated sugar, dark brown sugar and 1 cup water in a small saucepan. Heat gently over medium-low heat, stirring constantly until sugars fully dissolve (do not boil vigorously).

Once dissolved, simmer gently for 4–6 minutes to concentrate the syrup slightly. Remove from heat.

If using homemade caramel color: in a small dry skillet or saucepan, melt 1–2 teaspoons granulated sugar over medium heat until it browns and caramelizes. Carefully add a tablespoon of hot water (stand back, it may sputter) to dissolve caramel into a dark syrup and stir into the sugar syrup. This gives color and a faint burnt sugar note.

Stir in citric acid and (if using) powdered caffeine until fully dissolved. Taste carefully and adjust acidity by adding up to another 1/4 tsp citric acid if you prefer more tang.

Add the natural cola flavor blend (2 tsp). The 'natural cola flavor blend' is a prepared mix of essential or flavoring oils such as orange oil, lemon oil, cinnamon oil, nutmeg extract, coriander, and vanilla extract. If you are making your own blend, combine approximately: 3 drops orange oil, 2 drops lemon oil, 1 drop cinnamon oil, 1 drop nutmeg extract, 1/2 tsp vanilla extract, and a pinch (1/8 tsp) ground coriander dissolved into a small spoonful of neutral spirit or warm syrup before adding. Mix thoroughly into the syrup.

Allow the syrup to cool to room temperature. Strain the syrup through a fine mesh sieve or cheesecloth to remove any particulates from caramel or spices. Transfer to a clean bottle or jar and refrigerate. Syrup yield is roughly 1 to 1 1/4 cups and will keep refrigerated for up to 2 weeks.

Assembling the Drink

Chill serving glasses. Fill each glass with 1/2 cup (about 1 cup for a large serving) of ice cubes.

Measure syrup-to-carbonation ratio: a common starting ratio is 1 part syrup to 4 parts carbonated water for a balanced cola. For one 12 fl oz (about 355 ml) serving use approximately 2 oz (1/4 cup / 60 ml) syrup to 8 oz (1 cup / 240 ml) chilled carbonated water. For this recipe scale: use 1/4 cup (60 ml) syrup per 1 cup (240 ml) carbonated water.

Pour the measured cold syrup over the ice in the glass, then gently add the chilled carbonated water. Pour slowly down the side of the glass to preserve carbonation. Stir gently once with a long spoon to combine — avoid vigorous stirring to keep fizz.

Taste and adjust: if too sweet, add a splash more carbonated water; if too weak, add up to an additional 1 tablespoon syrup. If you want more acidity, add a tiny pinch (1/8 tsp) citric acid dissolved in a teaspoon of water and stir.

Garnish with a lime wedge or mint sprig if desired. Serve immediately.
