Prepare equipment

Place a medium heatproof bowl over a saucepan of gently simmering water (double boiler). Make sure the water does not touch the bottom of the bowl. Have a spatula, whisk, and molds or lined tray ready.

Melt the cocoa butter

Chop or measure the cocoa butter and add it to the heatproof bowl. Stir gently as it melts until fully liquid and smooth, keeping the water at a gentle simmer (not boiling).

Combine dry ingredients

While cocoa butter melts, sift the cocoa powder and powdered sugar together into a separate bowl to remove lumps. If using milk powder for milk chocolate, add it to the sifted mixture.

Incorporate dry into fat

Once the cocoa butter is fully melted and warm (not hot), remove the bowl from the heat briefly. Add about one-third of the sifted cocoa powder mixture and whisk thoroughly to create a smooth paste. Gradually whisk in the remaining dry mixture until fully incorporated and glossy. If mixture seems too thick, return briefly to very low heat and stir until smooth.

Adjust sweetness, add flavor & salt

Taste a small amount (use caution with temperature). If you want extra texture or sweetness, whisk in the optional granulated sugar (it may remain slightly textured unless fully dissolved by gentle heat). Stir in the vanilla extract and salt to balance flavor.

Optional refining

For a smoother texture similar to tempered chocolate, you can continue to stir over the warm (not hot) double boiler for 5–10 minutes to ensure sugars dissolve and the mixture becomes homogenous. Alternatively, use an immersion blender briefly to homogenize—avoid introducing air.

Pour into molds

Pour the finished chocolate into molds or into the parchment-lined tray. Tap the molds gently on the counter to release air bubbles and to level the surface.

Add inclusions & finish

If using nuts, dried fruit, or a sprinkle of sea salt, add them now while the chocolate is still fluid so they adhere. Press nuts lightly into the surface.

Set & store

Allow chocolate to cool at room temperature until it starts to set (15–30 minutes depending on thickness), then transfer to the refrigerator for 20–40 minutes until fully firm. Remove from molds and store in an airtight container in a cool, dry place (or refrigerator if your environment is warm).

Optional inclusions & finishing

To toast nuts: spread nuts on a baking sheet and toast in a 350°F (175°C) oven for 6–10 minutes until fragrant. Cool and chop before adding to chocolate.

If you prefer tempered chocolate for a glossy snap: after melting, cool the chocolate to about 80–82°F (27–28°C) by stirring off heat, then gently rewarm to 88–91°F (31–33°C) before molding. This requires a thermometer and careful temperature control.

Label and store: keep finished chocolate away from direct sunlight and strong odors. Use within 2–4 weeks for best flavor if stored at cool room temperature, or longer if refrigerated (may develop moisture when returned to room temperature).
