Method

Shrimp

Pat the shrimp dry with paper towels. Place in a bowl and season with 1 tsp kosher salt, 1/2 tsp black pepper, and 1 tbsp lemon juice. Toss to combine and let sit 5–10 minutes while preparing the breading station.

Breading station

Set up three shallow bowls or pie plates: one with the flour, one with the egg wash, and one with the Panko mixture.

Flour

Add 3/4 cup all-purpose flour to the first bowl.

Egg wash

In the second bowl, crack 2 large eggs, add 2 tbsp milk and whisk until smooth.

Panko mixture

In the third bowl, combine 1.5 cups Panko, 2 tbsp grated Parmesan (if using), 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne (optional), 1/4 tsp black pepper and 1/2 tsp kosher salt. Stir to evenly distribute seasonings.

Working in batches of 6–8 shrimp to avoid crowding later, dredge each shrimp first in the flour, shaking off excess; then dip into the egg wash, letting excess drip off; finally press into the Panko mixture, coating thoroughly. For an extra crunchy crust, repeat the egg wash and Panko step once more (double-coat). Place breaded shrimp on a wire rack set over a baking sheet while you finish breading the rest.

Frying

Pour 3 cups neutral oil into a deep, heavy skillet or Dutch oven to reach a 1 to 1.5-inch depth. Heat the oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping one small breadcrumb into the oil; it should sizzle and turn golden in about 30–45 seconds.

Fry the shrimp in small batches (do not overcrowd) for 2 to 3 minutes per batch, turning once, until golden brown and crisp and the shrimp are opaque and cooked through. Adjust heat as needed to maintain 325–350°F so the crust browns without burning.

Using a slotted spoon or spider, transfer cooked shrimp to a paper towel–lined plate or wire rack to drain. Lightly season with a pinch of salt immediately after frying, if desired.

Serving

Serve the popcorn-style shrimp hot with lemon wedges, tartar sauce or spicy mayo, and a sprinkle of chopped fresh parsley if desired. For best texture, serve immediately so the breading stays crisp.
