Method
Custard Scoop
Make or prepare thick custard
If you have ready-made pourable custard (store-bought or leftover), chill it until cold. To quickly thicken a loose custard for scooping, whisk 1 cup of vanilla custard with 2 tablespoons cold heavy cream, 1 teaspoon vanilla extract and 1 teaspoon sugar (optional). Chill 10–15 minutes to firm slightly. The mixture should be thick enough to hold a scoop but still pourable if slightly warmed.
For a firmer scoop (for floating on top), spoon the chilled custard into a small bowl and use an ice cream scoop or two spoons to form a rounded scoop. Return to the refrigerator while you prepare the beverage base so it remains chilled.
Beverage Base (floating or blended)
Floating method (scoop floats on top)
Choose a chilled beverage (iced coffee, iced tea, soda, or milk). Pour 1 cup of the beverage into a serving glass, leaving about 1–2 inches from the rim. Gently place one chilled custard scoop on the surface so it floats. The custard should sit on top; if it sinks, the custard is too thin — chill or thicken more.
Blended method (custard incorporated)
Place 1 cup chilled beverage, the prepared custard (1 cup), and 1 cup ice (if you want a frozen texture) into a blender. Pulse briefly until smooth but still slightly textured — about 6–10 seconds on medium speed. Taste and adjust sweetness; if too thick, add up to 2 tablespoons of beverage or milk and pulse once more.
Finish & Garnish
For a floating presentation: after placing the scoop, spoon 2 tablespoons whipped cream alongside or on top of the custard if desired. Dust with 1 teaspoon grated nutmeg or cocoa powder and drizzle 1 tablespoon caramel or chocolate over the custard.
For the blended drink: pour into a chilled glass, top with 1–2 tablespoons whipped cream, sprinkle 1 teaspoon cocoa or nutmeg and finish with a drizzle of caramel or chocolate if desired.
Serve immediately with a short spoon and a straw (for blended). If floating, serve promptly so the custard retains its shape on top of the beverage.
