Method
Prepare base
Combine dairy and sugar
In a large saucepan, combine 6 cups whole milk, 2 cups heavy cream and 1 cup granulated sugar. Place over medium heat and stir constantly until the sugar dissolves and the mixture is warm but not boiling (about 5–7 minutes).
Add flavoring and salt
Remove from heat. Stir in 2 tsp vanilla extract and 1 tsp fine sea salt until fully incorporated.
Cool base
Transfer the mixture to a heatproof bowl and let it cool at room temperature for 15 minutes, then cover and chill in the refrigerator until fully cold (at least 2 hours, preferably 4 hours or overnight). Chilling is important for a smooth texture.
Churn and finish
Prepare ice cream maker
Set up your ice cream maker according to the manufacturer's instructions and make sure the bowl is fully frozen if required.
Churn
Pour the chilled base into the ice cream maker and churn until it reaches a soft-serve consistency, typically 20–30 minutes depending on your machine.
Add mix-ins
If using mix-ins, add them in the last 3–5 minutes of churning: up to 1 cup chocolate chips, 1 cup strawberry puree (swirl), 1 cup crushed cookies or nuts, or 1/2 cup cooled espresso, as desired. Ensure additions are evenly distributed.
Harden
Transfer churned ice cream to a 1/2-gallon (about 8-cup) airtight container, smooth the top, press a piece of parchment directly on the surface to reduce ice crystals, and seal. Freeze for at least 4 hours to firm up.
Serve
Before serving, let the container sit at room temperature for 5–10 minutes to soften slightly for easier scooping. Scoop and serve in bowls or cones.
