Prepare steak
Pat the steak dry with paper towels. Season both sides with kosher salt, black pepper and garlic powder. Rub with 1 tablespoon olive oil and let rest at room temperature for 15 minutes while you prep other ingredients.
Marinade / sauce
In a small bowl combine soy sauce, Worcestershire, red wine vinegar (or lemon), brown sugar (or honey) and fresh thyme. Reserve half for finishing sauce and use the other half to brush lightly on the steak before cooking.
Cook steak
Heat a heavy skillet or grill pan over high heat until smoking hot. Add remaining 1 tablespoon olive oil. Lay steak into the pan and sear 3-4 minutes per side for medium-rare (internal 125-130°F / 52-54°C), or longer to desired doneness. During the last 30 seconds brush with reserved marinade to glaze. Transfer steak to a cutting board and tent loosely with foil; rest 8-10 minutes to retain juices.
Slice steak & build sandwich
Thinly slice the steak against the grain. Spread 1/2 tablespoon mayonnaise and 1/2 tablespoon mustard on each roll half. Layer bottom halves with lettuce, sliced steak, a slice of cheese (if using), tomato, red onion and pickles. Spoon 1 tablespoon of the reserved finishing marinade/pan sauce over the steak to add moisture and flavor. Top with roll top and press gently. Cut in half and serve.
Choice of Side (instructions)
French fries (if selected)
If using frozen fries, bake or fry according to package instructions until golden and crispy (about 20-25 minutes at 425°F / 220°C for oven fries, turning once). Season with salt immediately after cooking.
Potato salad (if selected)
If using prepared potato salad, portion 1 cup per serving and chill until service. Garnish with chopped parsley or paprika if desired.
Sauerkraut (if selected)
Warm sauerkraut in a small saucepan over medium heat for 3-5 minutes until heated through. Drain excess liquid and serve alongside sandwich.
