Prep proteins & vegetables
Prepare proteins
If using bacon: cook 2 slices in a skillet over medium heat until crisp, drain on paper towels and chop. If using sausage: remove casings if necessary, crumble and cook in skillet until cooked through and browned, drain. If using turkey: chop deli turkey into small pieces. Keep warm and set aside.
Cook vegetables
Heat 1 tsp olive oil in a nonstick skillet over medium heat. Add diced bell pepper and/or onion (if chosen) and sauté 2–3 minutes until slightly softened. Add mushrooms (if chosen) and cook 2 more minutes until browned. Add spinach (if chosen) and toss 30–45 seconds until wilted. If using tomato, add it last and warm 30 seconds—do not overcook. Season vegetables lightly with a pinch of salt and pepper. Transfer cooked vegetables to a plate and set aside.
Make the egg base
Crack 3 large eggs into a bowl, add 2 tbsp whole milk, 1 tsp salt and 1/4 tsp black pepper. Whisk vigorously until mixture is uniform and slightly frothy (about 20–30 seconds).
Heat a clean 8–10 inch nonstick skillet over medium-low heat. Add 1 tbsp unsalted butter and let it melt, swirling to coat the pan. Reduce heat to low–medium so eggs cook gently (prevents browning).
Pour the egg mixture into the skillet and let it sit undisturbed for 10–15 seconds until edges begin to set. Using a spatula, gently pull the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue until the top is mostly set but still slightly moist (about 60–90 seconds).
Assemble & finish
Evenly distribute your two chosen vegetables across one half of the omelet. Sprinkle your chosen cheese (about 1/4 cup grated cheddar or swiss, or 2 tbsp crumbled goat cheese) over the vegetables. Top with the chosen protein (bacon, sausage, or turkey).
Use the spatula to lift the opposite edge of the omelet and fold it over the fillings to create a half-moon. Let the folded omelet cook 30–45 seconds to allow cheese to melt and fillings to warm through. If the omelet is still very runny, cover the pan for 20–30 seconds to finish cooking gently.
Notes & tips
Timing: Cook proteins and vegetables ahead if making multiple omelets. For a fluffier omelet, separate eggs and whip whites to soft peaks, then fold in yolks (not required for this recipe). Adjust salt if using salty proteins like bacon or pre-seasoned sausage.
