Cook the meat
Choose sausage or bacon. For sausage patties or bulk: heat a skillet over medium, add 1 tsp oil if using bulk, cook sausage until browned and cooked through, about 6–8 minutes (internal 160°F/71°C); break up if bulk. For bacon: lay strips in a cold skillet, cook over medium, turning until crisp‑to‑your‑preference, 6–10 minutes; transfer to paper towel to drain. Keep warm.
Warm tortillas
Warm 2 flour tortillas one at a time in a dry skillet over medium for 15–30 seconds per side until pliable and lightly browned in spots. Alternatively wrap in foil and heat in a 325°F (160°C) oven for 5–8 minutes or microwave covered for 20 seconds.
Make fluffy scrambled eggs
Crack 4 eggs into a bowl, add 2 tbsp milk, 1 tsp salt, and 1 tsp black pepper; whisk until uniform and slightly frothy. Heat a nonstick skillet over medium‑low and add 1 tbsp unsalted butter. When butter is melted and foamy but not browned, pour eggs in. Let sit 10–15 seconds until edges start to set, then gently stir with a spatula from the edges to the center, folding to form soft curds. Remove from heat when eggs are mostly set but still slightly glossy, about 2–3 minutes, as residual heat will finish them. Taste and adjust seasoning.
Cheese & Avocado
Prepare avocado
Halve, pit, and scoop avocado into a small bowl. Mash lightly with a fork, add 1 tsp lime juice and 1/4 tsp salt; mix to a creamy but slightly chunky consistency. Keep covered to avoid browning if not assembling immediately.
Cheese
Have 3/4 cup shredded cheddar ready to sprinkle on the warm eggs/tortilla so it begins to melt when assembled.
Pico de Gallo
Make pico
Dice 1 ripe tomato and 1/4 small red onion into small pieces. Finely chop 2 tbsp cilantro and mince 1/2 jalapeño if using. Combine in a bowl with 1 tbsp fresh lime juice and 1/4 tsp salt; stir and taste, adjust salt or lime as needed. Let sit 5–10 minutes for flavors to marry.
Assembly & Finish
Assemble the burritos while components are warm. Lay a warmed tortilla on a clean surface. Spread half of the mashed avocado down the center of the tortilla in a line (about 2–3 tbsp). Layer half of the scrambled eggs on top of the avocado. Crumble or slice the cooked sausage or bacon and distribute evenly over the eggs.
Sprinkle half of the shredded cheddar (about 6 tbsp) over the eggs and meat so it melts slightly from the heat. Spoon 2–3 tbsp pico de gallo on top of the cheese. Add hot sauce or extra salsa if desired.
Fold the burrito: fold the short edges in slightly, then roll tightly from one long side to the other, tucking ingredients as you go. Place seam‑side down in a skillet over low heat for 1 minute per side to seal and crisp slightly, if desired.
Repeat to make the second burrito with remaining ingredients.
Serve immediately. Optionally slice in half and serve with extra pico, salsa, or hot sauce on the side.
