Cook the Rigatoni

In a large pot of boiling salted water, add the rigatoni pasta. Cook according to package instructions until al dente, usually around 10-12 minutes. Drain and set aside.

Pork Ragu

Prepare the Ragu

In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables are soft and the onion is translucent, about 5-7 minutes.

Cook the Pork

Add the ground pork to the skillet, breaking it up with a spoon. Cook until browned, about 5-6 minutes.

Add Flavorings

Stir in the red pepper flakes, crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer and let it cook for about 20 minutes, stirring occasionally, until the sauce thickens.

Finish the Ragu

Add the chopped fresh basil to the ragu just before serving and stir well.

Whip the Ricotta

In a medium bowl, combine the ricotta cheese, heavy cream, and a pinch of salt. Using an electric mixer, whip the mixture until it becomes light and fluffy, about 2-3 minutes.

Combine and Serve

Combine Pasta and Ragu

In a large serving bowl, toss the drained rigatoni with the pork ragu until well combined. Adjust seasoning if necessary.

Serve

Top the rigatoni with dollops of whipped ricotta and garnish with additional fresh basil if desired. Serve hot.
