Base Preparation
Prepare the Milk and Cream Mixture
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling.
Whisk the Egg Yolks and Sugar
In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick.
Cook the Mixture
Cook the mixture over medium heat, stirring constantly until it thickens and coats the back of a spoon (about 5-7 minutes). Do not let it boil.
Cool and Add Flavor
Remove from heat, stir in the vanilla extract, and allow the mixture to cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.
Flavoring and Churning
Choose Your Flavor
Once the base is chilled, divide it into portions if making different flavors. Add your chosen flavoring: for chocolate, melt the chocolate and mix it in; for strawberries, fold in the mashed strawberries; for pistachios, mix in the chopped pistachios.
Churn the Gelato
Pour the flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze the Gelato
Transfer the gelato to an airtight container and freeze for at least 2 hours or until firm.
