Prepare Simple Syrup

Combine sugar and water

In a small saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar dissolves completely.

Once dissolved, bring the mixture to a gentle boil for 1–2 minutes, then remove from heat and let it cool to room temperature.

Prepare Fruit Base

Clean and chop the seasonal fruit into small pieces. Measure out 4 cups.

In a blender or food processor, combine the chopped fruit and fresh lemon juice. Blend until smooth.

Optional: If the fruit has seeds or a fibrous texture, strain the purée through a fine mesh sieve to remove solids.

Combine and Flavor

Once the simple syrup has cooled, add it to the fruit purée and stir to combine thoroughly.

If using, stir in the chopped mint leaves and lime zest at this point.

Freeze and Serve

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20–25 minutes, until it reaches a smooth and scoopable consistency.

Transfer the sorbet to an airtight container and freeze for at least 2 hours to firm up.
