Prepare glass (optional rim)

If you want a sugared rim, rub the outer edge of a chilled coupe or rocks glass with a lime wedge, then dip the rim lightly into fine sugar set on a small plate. Set glass aside.

Build and shake

In a cocktail shaker add 1 oz Del Maguey Vida mezcal, 0.5 oz Ketel One Grapefruit & Rose vodka, 0.5 oz St. Germain elderflower liqueur, 0.75 oz fresh lime juice, and 0.5 oz lavender simple syrup. Add 1 dash grapefruit bitters if using. Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the shaker is very cold to the touch.

Double strain

Double strain the cocktail into the prepared chilled coupe (or a rocks glass with fresh ice) using a Hawthorne and fine mesh strainer to remove ice shards and any lavender bits.

Garnish & Finish

Express the oils of a lime wheel over the drink by squeezing it briefly and running it around the rim, then drop the wheel into the drink or rest it on the rim.

Garnish with an edible lavender sprig or a small pinch of dried lavender on top for aroma. Serve immediately.
