Heat 1 tablespoon vegetable oil in a small saucepan over medium heat. Add the blended salsa and simmer gently 5–7 minutes to deepen flavor and remove raw edge. Stir occasionally. Remove from heat and keep warm.

Prepare tortillas
In a small skillet (10-inch), pour about 1/8 cup (30 ml) of the vegetable oil and heat over medium-high until shimmering but not smoking (about 350°F if using a thermometer). Fry each corn tortilla one at a time 20–30 seconds per side until slightly crisp at the edges but still pliable. Transfer to a paper towel-lined plate and season lightly with a pinch of salt. Keep warm in a low oven (200°F/95°C) or covered.
Cook eggs
Wipe the skillet clean and lower heat to medium. Add butter (or 1 tsp oil). Crack eggs into the skillet and cook to preference: for sunny-side-up, cook 2–3 minutes until whites set but yolks still runny (cover pan 30–45 seconds to finish whites if needed). For over-easy, cook 2 minutes then flip and cook 15–30 seconds. Season whites with remaining 1/2 tsp kosher salt and 1/4 tsp black pepper while cooking. Make one egg per tortilla.
If serving refried beans, warm them in a small pot over low heat, stirring occasionally. Spoon 1/4 cup beans onto each tortilla as a base (optional).
Assembly and Toppings
Place one fried tortilla on each plate (or two if you prefer a double stack). If using beans, spread ~1/4 cup warmed refried beans on each tortilla.
Ladle 1/3 to 1/2 cup warm salsa ranchera over each tortilla, spreading slightly but leaving room for the egg.
Gently slide a cooked egg onto each sauced tortilla.
Top eggs with 2 tablespoons crumbled queso fresco, a dollop (about 1 tablespoon) of sour cream or crema, sliced avocado, and a sprinkle of chopped cilantro. Add pickled jalapeños if using and serve with lime wedges on the side.
Serve immediately so yolks remain runny. Provide extra salsa and lime at the table.
