Build and mix

Add 2 oz Cazadores Blanco, 0.5 oz Lejay Cassis and 0.75 oz fresh lime juice into a cocktail shaker or mixing glass. If you prefer a touch more sweetness to balance the cassis and lime, add 0.25 oz simple syrup. Add 2 dashes Angostura bitters if using.

Add a short handful (about 1 cup) of crushed or pebble ice to the shaker. Shake vigorously for 8–10 seconds just to chill and slightly dilute the mix (this also helps integrate the cassis).

Fill a highball glass with crushed or pebble ice. Strain the shaken mix over the ice into the glass, leaving room for the ginger beer.

Top with about 4 oz homemade ginger beer, pouring gently down the side to keep a slight layered look. Give the drink one gentle stir (1–2 turns) with a bar spoon to marry the ginger beer with the spirit mix without fully losing carbonation.

Garnish & Finish

Float a lime wheel or wedge on top, or tuck it on the rim. Add a mint sprig for aroma if desired. Serve with a straw and a small stirring spoon.

Recommended glassware: highball. Estimated temperature: serve immediately while very cold and effervescent.
