Combine ingredients
In a cocktail shaker, add 2 oz pisco, 0.75 oz fresh lime juice, 0.5 oz simple syrup, 0.5 oz fresh grapefruit juice, 0.25 oz dry vermouth, 0.25 oz Aperol (or Campari), 0.5 unit egg white (if using), and 2 dashes Angostura bitters.
Dry shake (if using egg white)
If you included the egg white, seal the shaker and dry-shake (without ice) vigorously for 10–15 seconds to emulsify and build a silky foam.
Shake with ice
Add a generous handful of ice to the shaker. Shake vigorously for 10–15 seconds until the shaker is cold to the touch and the mixture is well-chilled and slightly diluted.
Double strain
Dump the ice/water from your chilled glass. Strain the cocktail through a fine mesh strainer (and the shaker strainer) into the chilled coupe to remove ice shards and ensure a silken texture.
Garnish
Express the oils of a grapefruit twist over the surface of the cocktail, then drop the twist into the drink or rest a thin grapefruit wheel on the rim. Optionally add 1 small dash of Angostura on the foam and swirl for aroma.
Serve
Serve immediately while cold. Sip and enjoy the bright citrus, floral pisco backbone, and subtle bitter-sweet balance from the aperitif.
