Rim the Glass

Prepare rim

Pour citrus salt onto a small plate. Rub the lime wedge around the outside rim of a highball or collins glass (not the inside). Press the moistened rim into the citrus salt to coat. Set the glass aside.

Build the Cocktail

Fill the rimmed glass with cubed ice, leaving room at the top for soda.

In a cocktail shaker (or mixing glass) add Altos Plata tequila and fresh lime juice. If you prefer a slightly sweeter Paloma, add the simple syrup.

Add a few ice cubes to the shaker, cap it, and shake vigorously for about 8–10 seconds to chill and slightly dilute the mixture.

Strain the tequila and lime mixture into the prepared glass over the ice.

Top with chilled grapefruit soda (about 4 oz). Gently stir once or twice with a bar spoon to combine without losing carbonation.

Garnish with a grapefruit wedge on the rim (or a thin grapefruit wheel). Serve immediately.
