Method
Doner Meat (prepare and cook)
Make meat mixture
In a large bowl combine chosen ground meat (1 lb), finely grated onion (1/2 cup), breadcrumbs (1/4 cup), egg (1), minced garlic (2 tsp), cumin (1 tsp), coriander (1/2 tsp), paprika (1 tsp), black pepper (1/2 tsp) and salt (1 tsp). Mix thoroughly with your hands or a spoon until evenly distributed and sticky—chill 20–30 minutes to firm up if time allows.
Form and sear
Divide the meat into 4 equal portions and shape each into a long flat sausage or oblong patty about 1/2–3/4 inch thick. Heat 2 tbs olive oil in a large skillet or griddle over medium-high heat. Sear the patties 3–4 minutes per side until deeply browned and internal temperature reaches 160°F (71°C) for beef/lamb or 165°F (74°C) for chicken. Alternatively, stack and thinly slice after resting to mimic shaved doner texture.
Finish and rest
Transfer cooked meat to a plate, tent loosely with foil and rest 5 minutes. If desired, thinly slice or shred the patties across the grain before assembling.
Waffle Sesame Flatbread
Prepare dough
In a small bowl combine warm water (1/2 cup), warm milk (1/4 cup), sugar (1 tsp) and yeast (1 tsp). Let stand 5–10 minutes until foamy. In a mixing bowl combine 2 cups flour and 1 tsp salt. Add yeast mixture and 2 tbs olive oil. Stir until a shaggy dough forms, then knead by hand on a lightly floured surface 6–8 minutes until smooth and elastic. Alternatively use a stand mixer with dough hook for 4–5 minutes.
Divide and shape
Punch down dough and divide into 4 equal pieces. Roll each into a ball, then flatten into rounds about 7–8 inches across and 1/4 inch thick. Sprinkle sesame seeds on one side and gently press so they adhere.
Cook waffle-style
Preheat a waffle iron on medium (or a griddle/pan). Lightly brush the cooking surface with oil. If using a waffle iron, cook each flatbread 2–4 minutes until golden and sesame seeds toasted. If using a griddle, cook each side 2–3 minutes until puffed and golden; press with a spatula to get waffle-like indentations. Brush hot breads with melted butter (2 tbs). Keep warm wrapped in a towel.
Vegetables & Sauces (prep)
While meat and breads are resting/cooking, prepare vegetables: shred 2 cups lettuce, thinly slice 1 red onion, thinly slice or dice 2 tomatoes, and thinly slice 1 cup red cabbage. Chop 2 tbs parsley if using. Portion sauces into serving bowls: 3/4 cup garlic yogurt sauce, 1/2 cup spicy red sauce, 1/2 cup tangy herb sauce.
Taste and adjust: squeeze a little lemon juice over tomatoes or cabbage if you like extra brightness. Season sliced onions lightly with a pinch of salt if preferred.
Assemble & Serve
To assemble each kebab: open a warm sesame waffle flatbread. Spread a tablespoon each of garlic yogurt sauce and tangy herb sauce and a teaspoon of the spicy red sauce (adjust amounts to taste) down the center.
Serve immediately with lemon wedges and extra sauces on the side.
