Prepare protein

If using chicken or turkey: pat 1/2 breast (about 3–4 oz) dry, season both sides with 1/4 tsp salt and 1/8 tsp black pepper. Heat 1 tbs olive oil in a small skillet over medium-high heat. Cook breast 3–4 minutes per side until internal temperature reaches 165°F (74°C). Let rest 3 minutes, then thinly slice. If using roast beef (pre-cooked, lean): warm slices briefly in the pan with 1 tsp olive oil over medium heat for 30–60 seconds just to take the chill off; then set aside and keep warm.

Toast waffle bread

Lightly toast 1 piece of waffle bread on a griddle or in a toaster oven until golden and slightly crisp (about 1–2 minutes each side). Avoid over-toasting so it remains pliable.

Assemble vegetables

Place 1/4 cup shredded lettuce on the bottom center of the toasted waffle bread. Add 1/4 cup thinly sliced red cabbage in a thin layer. Top with 2 tomato slices and 3 thin rings of red onion arranged evenly over the greens.

Add protein

Arrange the warm sliced chicken/turkey or warmed roast beef over the vegetables in a single small layer so the sandwich remains a 'smaller bite'.

Three Signature Sauces

Finish with sauces: Drizzle or spread 1 tablespoon creamy garlic sauce evenly over the protein. Dot the smoky chili sauce (1 tsp) in 2–3 small spots for smoky heat, then drizzle the tangy herb vinaigrette (1 tsp) sparingly for brightness. If desired, lightly fold or press the sandwich to distribute sauces evenly.

Serve

Fold or close the waffle bread gently (if bread is large enough) or serve open-faced as a smaller lunch portion. Cut in half if preferred. Serve immediately while protein is warm and waffle bread still slightly crisp.
