Warm the wraps

Lightly brush each flatbread with about 0.5 tsp butter or oil. Heat a large skillet over medium heat and warm each flatbread 30–45 seconds per side until pliable and lightly golden. Stack and keep covered with a clean towel to stay warm.

Doner Meat (choose one or mix)

Reheat doner slices

If using pre-cooked doner meat, reheat in a skillet over medium-high heat with 1 tsp oil for 3–5 minutes, stirring, until warmed through and slightly crisp at the edges. For crispier texture, spread slices in a single layer and let sit 30–60 seconds before turning. If using vegetarian doner, follow package instructions for reheating.

Season the warmed doner lightly with 0.5 tsp salt, 1/4 tsp black pepper, and 1 tbs lemon juice; toss to combine. Keep warm until assembly.

Prepare vegetables

Wash and dry lettuce; shred or chop to create about 2 cups. Thinly slice or dice tomatoes to make 1 cup. Thinly slice 1/2 cup red onion and finely shred 1 cup red cabbage. If using pickles, drain and slice. Toss lettuce, tomato, onion, and cabbage lightly with remaining 1/2 tsp salt, 1/4 tsp black pepper and 1/2 tbs lemon juice to brighten flavors.

Prepare or adjust sauces

If using store-bought sauces, taste and adjust: thin yogurt-mint with 1–2 tsp water if too thick; mix garlic mayo with a small squeeze of lemon if desired; stir chili sauce to ensure smoothness. For homemade quick versions: mix 1/2 cup mayonnaise with 1 small crushed garlic clove and 1 tsp lemon (garlic mayo); combine 1/2 cup Greek yogurt with 1 tbsp chopped mint and 1 tsp lemon (yogurt-mint); use 3 tbsp sriracha or your preferred chili sauce as-is.

Assemble the munch wrap

Lay a warm flatbread on a work surface. Spread about 1 tablespoon garlic mayonnaise down the center lengthwise, then drizzle 1 tablespoon yogurt-mint and 1 tablespoon spicy chili sauce in separate lines (adjust amounts to taste). Place about 100 g warmed doner meat (roughly 1/4 of the meat portion) over the sauces in the center. Top with about 1/2 cup shredded lettuce, 1/4 cup tomato, 2 tbsp red onion, and 1/4 cup shredded red cabbage. Add 2–3 pickle slices if using and sprinkle a pinch (about 1/8 tsp) dried oregano/za'atar if desired.

Fold the bottom edge of the flatbread up over the filling, then fold the sides in and continue rolling tightly to make a compact "munchable" wrap. If desired, grill the sealed seam-side down in a hot skillet 30–60 seconds to help seal and add light crispness.

Repeat assembly for remaining wraps. Serve immediately while warm with extra sauces on the side.
