Doner Meat (serves 4)

Method

Doner Meat (marinate + roast/pan)

Marinate

In a large bowl combine the lamb pieces, 2 tbs olive oil, minced garlic, grated onion, ground cumin, ground coriander, black pepper and 1.25 tsp salt. Toss thoroughly to coat. Cover and refrigerate for at least 2 hours or up to overnight to let flavours penetrate.

Cook - oven method (preferred for larger batch)

Preheat oven to 200°C (400°F). Thread marinated meat onto metal skewers or lay in a single layer on a rimmed baking sheet fitted with a rack. Roast 20–30 minutes, turning every 8–10 minutes, until edges are caramelized and internal temperature reaches 70–75°C (160–167°F). Allow meat to rest 5 minutes, then thinly slice or shred with forks to resemble doner shavings.

Cook - stovetop alternative (for quicker service)

Heat a large heavy skillet or cast-iron pan over medium-high heat. Add 1 tbs oil if pan is dry. Add marinated meat in batches so it browns rather than steams. Cook 6–10 minutes per batch, stirring and pressing slightly, until deeply browned and cooked through. Remove to a plate and keep warm; slice or shred before serving.

London Jerk Sauce

Prepare ingredients: remove stems from chillies (seed if you want less heat), roughly chop chillies, green onions and thyme leaves. Peel garlic and ginger.

Place chopped chillies, green onions, thyme, garlic, ginger, allspice, dark brown sugar, soy sauce, lime juice, smoked paprika, white vinegar, 3 tbs vegetable oil and ½ tsp salt into a blender or food processor. Blend until very smooth, scraping down sides as needed. Taste and adjust salt, sugar or lime for balance — sauce should be smoky, hot and slightly sweet. This yields about 1 cup. Reserve 3–4 tbs to finish meat while serving and keep the rest for drizzling over fries.

If you prefer a cooked sauce and deeper smoky flavour: transfer blended sauce to a small saucepan and simmer gently for 5–7 minutes, stirring, then cool slightly before using.

To finish the doner meat: warm about 3–4 tbs London Jerk sauce in a skillet over low heat and toss with sliced/shredded meat to glaze and infuse with the jerk flavour just before plating.

Signature Yogurt Sauce

In a small bowl whisk together 1 cup Greek yogurt, 1 tbs lemon juice, 1 minced garlic clove, 1 tsp olive oil, ½ tsp salt, ¼ tsp black pepper and 1 tbs chopped mint or dill (if using). Taste and adjust seasoning. Chill until ready to serve. This sauce provides a cool counterpoint to the spicy jerk.

Fries

If using fresh potatoes (twice-cook method for crispy fries)

Cut potatoes into 1/3–1/2-inch fries and place in cold water; soak 30 minutes to remove starch. Drain and pat completely dry with towels. Heat vegetable oil in a deep pot to 160°C (320°F). Fry potatoes in batches for 4–6 minutes until pale and tender but not browned. Remove to a rack or paper towel. Increase oil temperature to 190°C (375°F) and fry again in batches 2–4 minutes until golden and crisp. Drain, season with 1 tsp fine salt and ½ tsp pepper while hot.

If using oven-baked fries (simpler)

Preheat oven to 220°C (430°F). Toss cut and dried fries with 2–3 tbs oil and spread on a single layer on a baking sheet. Bake 20–30 minutes, turning once, until golden and crisp. Season with salt and pepper to taste.

If using frozen fries, cook according to package instructions until extra-crispy and season with salt and pepper.

When fries are hot, toss lightly with 2–3 tbs London Jerk sauce (optional) or serve sauce on the side for drizzling.

Assembly — London Jerk Doner Box

Divide fries among 4 boxes or bowls as the base.

Top each portion of fries with a generous helping of the glazed sliced/shredded doner meat (about 300 g per serving).

Drizzle 1–2 tbs London Jerk sauce over the meat and fries (adjust to heat preference).

Add 2–3 tbs signature yogurt sauce on top or on the side for each box.

Garnish with chopped parsley or cilantro and serve with lime wedges for squeezing over the box.

Serve immediately while fries are hot and meat is warm.
